I put this on the site for two reasons. First, in case I lose the notepad that I scribbled this recipe on (at least I’ll still have it on my multiply site) and secondly, so that everyone can enjoy the best caesar salad dressing I’ve ever tasted. Makes 4 servings.
In a large bowl, smash the anchovy fillets to a pulp (this is quite disgusting, so if you can get your hands on the anchovy paste it will save you a great deal of time and doesn’t taste any different that I can tell). Add in the two cloves of garlic (I may even use three cloves depending on the size), then whisk in the mayonnaise, parmesan/romano, lemon juice, olive oil, dijon mustard, and Worcestershire (basically all the remaining ingredients). Once you have blended all of the ingredients, just toss with romaine lettuce (I mix the dressing and the lettuce with my hands – it’s messy), some caesar croutons (Gardini’s are my favorite), fresh grated/shaved parmesan (this is worth the fresh stuff), and fresh ground pepper. You will be amazed at how good this taste’s.
